Biography

Early years

Born on 29 June 1978 in Manresa, Cruz began working at the Estany Clar restaurant between Cercs and Berga at fourteen and trained at the Escola Superior d'Hostaleria de Manresa. He took the Spanish Young Chefs Championship in San Sebastián in 2002 and the International Olive Oil Cooking Prize from Jaén in 2003.

Career

In November 2004 he earned his first Michelin star at Estany Clar at age twenty-six, becoming the youngest chef in Spain — and the second youngest in the world — to receive the distinction. In late 2007 he left Estany Clar and took over L'Angle at the Món Sant Benet hotel, which earned its first star the following year. Since 2010 he has led ABaC in Barcelona, which earned its third Michelin star in November 2017. His Barcelona group now includes Àngle (1 star), Atempo (1 star), and the casual Ten's. He has been a judge on Spain's MasterChef since 2013.

Philosophy

Cruz is associated with technically intense Catalan haute cuisine, built around long, theatrical tasting menus and an emphasis on dish architecture and seasonal product. His group brings the same culinary signature across price points — three-star ABaC at the top, the casual Ten's at the bottom — but with the same insistence on technique and finish.
