Biography

Early years

Pellicer trained in France under Jacques Maximin and Alain Dutournier — two foundational figures in modern French cuisine — before returning to Catalonia.

Career

Pellicer led two of Catalonia's most influential kitchens: Can Fabes under Santi Santamaria, and ABaC. In 2018 he opened his own restaurant, Xavier Pellicer · Healthy Kitchen, on Carrer de Provença in the Dreta de l'Eixample — a vegetable-forward project that sources from small-scale and biodynamic producers. The restaurant holds two Repsol Soles and was voted Best Vegetable Restaurant in the World in both 2018 and 2019 by the We're Smart Green Guide.

Philosophy

Pellicer's Healthy Kitchen treats vegetables as the centre of the plate rather than a side.
