Chef Bernabé Caravotta's fusion restaurant on Plaça del Progrés in Santa Catalina, Palma, where instead of a fixed tasting menu you build your meal by choosing the countries you want to eat through, and the kitchen sends dishes drawn from those places. Referencing Thailand, Peru, France, Japan, Mexico, Spain, India, Colombia and Italy. Cocktails, wine and service are treated as part of the same experience. Caravotta cooked at Mirazur in France and with René Redzepi at Noma in Denmark before moving to Mallorca in 2007; Sebastián Pérez runs the dining room and wine pairings.

Background

About Vandal

The Story

Vandal sits on Plaça del Progrés in Santa Catalina, the part of Palma where most of the city's interesting kitchens have ended up. The restaurant's own line is that it wasn't planned in an office: it came together across travels and kitchens around the world, out of conversations between two people who wanted to break the usual restaurant rules. The format reflects that. Instead of a fixed tasting menu, you build your meal by choosing the destinations you want to travel through, and the kitchen sends out dishes drawn from those places. Cocktails, wine and service are treated as part of the same experience rather than add-ons.

The Cuisine

Fusion cooking that Guía Repsol calls cocina mestiza, built around local Mallorcan produce but pulling from kitchens worldwide. The menu is organised by country, with dishes referencing places like Thailand, Peru, France, Japan, Mexico, Spain, India, Colombia and Italy. Cocktails are paired to the food rather than treated as a separate list.

The Team

The kitchen is led by chef Bernabé Caravotta, who cooked at Mirazur in France and with René Redzepi at Noma in Denmark, and trained at the Blue Elephant cooking school in Thailand before moving to Mallorca in 2007. Sebastián Pérez runs the dining room and the wine pairings.

Experience

Vandal Dining Experience

Vandal frames itself as somewhere between elegant and irreverent, treating cuisine, cocktails and service as one experience, cooked in an open kitchen on Plaça del Progrés. The room is modern and stylish, loud and moody-lit, better for friends and groups than quiet talk. A stylish, late-night Santa Catalina crowd.

Nearby
