The Story
Vandal sits on Plaça del Progrés in Santa Catalina, the part of Palma where most of the city's interesting kitchens have ended up. The restaurant's own line is that it wasn't planned in an office: it came together across travels and kitchens around the world, out of conversations between two people who wanted to break the usual restaurant rules. The format reflects that. Instead of a fixed tasting menu, you build your meal by choosing the destinations you want to travel through, and the kitchen sends out dishes drawn from those places. Cocktails, wine and service are treated as part of the same experience rather than add-ons.
