
Voro becomes Mallorca's second restaurant with three Repsol Soles

Voro was one of only three restaurants in Spain to reach three Soles this year, alongside A Tafona in Santiago de Compostela and Ramón Freixa Atelier in Madrid. Voro also holds two Michelin stars. It is the second restaurant in Mallorca to reach three Soles, after Maca de Castro in Port d'Alcudia, which first earned the distinction in 2019.
The restaurant remains under the direction of Álvaro Salazar, whose cooking the guide describes as a Mediterranean approach shaped by his Andalusian background.
The other two three-Sol restaurants show the range of this year's list. A Tafona, led by chef Lucía Freitas and holder of one Michelin star, builds its menu around vegetables from its own garden and fresh seafood. Ramón Freixa Atelier in Madrid, which has two Michelin stars, seats only ten diners a service around an open kitchen.
Toni Mir, chief executive of the Cap Vermell Group, which owns the hotel, said receiving the third Sol was "the best way to begin the year" and that the team was "tremendously grateful" for it. Salazar said he felt "very happy, but very demanding," adding that he looks for new ideas every day.
Salazar was born in 1985 in Linares, Jaén, and trained at Tragabuches in Ronda and El Portal de Echaurren in Ezcaray before working in Madrid, Paris, Kuwait and Stockholm. San Pellegrino named him one of Spain and Portugal's top 10 young chefs in 2015, and he held a Michelin star at Argos before opening Voro.
Voro opened in March 2019 inside the Cap Vermell Grand Hotel and seats 24 diners around its tasting menu, Devoro, which changes through the year.
