The Story

Samm opened in September 1973, when Vicente and Carmen came from Manises, near Valencia, to what was then the outer edge of Madrid. They brought a way of cooking rice that the city didn't really have yet, over live fire, with a slow sofrito and respect for the grain, and built the whole restaurant around the paella pan. Their children joined the kitchen in the 2000s and still run it today, the Asunción family, with the same recipes and many of the same suppliers; the house counts three generations now. The additions over fifty years have been few: an air-conditioned terrace, valet parking and rice to take home. It won a Wikipaella award in 2020 and is listed in the Guía Repsol.

The kitchen works the Valencian rice repertoire: the arroz del senyoret and the paella Valenciana are the signatures, with a classic ensaladilla rusa to start and a tarta de queso as the most-asked-for dessert.

The Rices

Six recipes have barely changed in decades, all made with DOP rice. The paella Valenciana follows the Manises recipe without shortcuts: chicken, rabbit, garrofó beans, green beans and saffron. The arroz del senyoret comes with everything peeled so you never get your hands dirty, on a rock-fish stock. The arroz al horno is baked in a clay dish with chickpeas, morcilla and a whole roasted head of garlic. Before the rice, the house recommends red prawns simply boiled, the ensaladilla rusa with bonito belly and egg, crisp fried milk-fed lamb sweetbreads with garlic and parsley, hand-carved Ibérico ham or grilled squid. Dry, meloso and soupy rices all feature on the full carta, and the staff match the wine to the rice rather than the other way round, from Rioja and Ribera to syrahs from houses such as Izadi, Calzadilla, Abadía Retuerta and Alión.
