The Story

La Taberna de Paula is the project of cook and owner José Manuel Marina Puig, known as Pepote, who by the venue's own account left an office career to run a bar in the Chamberí barrio where he grew up.

The Cuisine

The kitchen leans traditional and seasonal: pinchos and raciones alongside house dishes like the empanada, Basque-style artichokes, callos, carrilleras estofadas al oloroso and rabo de toro, with a house Cariñena wine and Rioja and Ribera labels.

The Two Queens and the Stews

The house calls its empanada and its seasonal Basque-style artichokes 'the two queens of the house'. Around them are slow-cooked, traditional dishes made with care for the raw materials: carrilleras stewed in oloroso, rabo de toro Córdoba-style, the house beef stew and a 'lacón con sorpresa', alongside callos and a fresher avocado salad with blended tomato and Dijon mustard. From the sea there's fried hake, ajoarriero and chipirones to order.

Aragonese Roots and the House Wine

Pepote's Aragonese roots show in his recipes and above all in the wine: the house pour is a Marqués de Tosos reserva from Bodegas Gran Ducay in Cariñena, alongside Riojas, Riberas and other denominations. The bar opens Monday to Saturday for lunch and dinner, with a terrace in good weather.
