The Carta

To start: 'Encinares del Sur' Ibérico bellota ham, Italian antipasti with bresaola and truffled mortadella, a tasting of Spanish cheeses, Ibérico croquetas, chips with fried egg and crystal prawns, tuna ensaladilla and fried squid with lime. From the garden: a seasonal tomato salad with ventresca and Dominus oil, and a grilled leek with smoked carbonara, guanciale and parmesan. Fish runs to sea bass with beurre blanc and wild asparagus, grilled turbot with garlic-chilli emulsion and grilled squid; meat to beef tenderloin with demi-glace, venison ravioli with vermouth jus, Ibérico abanico cured in aromatised salt, and an aged entrecôte (€30).

The Tableside Tartare

The house signature is the steak tartare of aged beef (€27), prepared at the table by the maître as a piece of show cooking. Desserts are made in house by the pastry chef. Ask about the dish of the day and the seasonal menu.
