The Story

La Martinuca is named after a real grandmother, Martina, whose creamy, just-set tortilla with a hint of extra virgin olive oil was the family's signature and the excuse to gather everyone around the table. The business set out to make that recipe 'eternal and global': it now has bars across Madrid (Chamartín, Barquillo, Paseo de San Francisco de Sales, the Mercado de San Leopoldo and Pozuelo among them) and delivers in Madrid, Barcelona and Valencia. This branch is in the Madnum food hall on Calle de Méndez Álvaro.

The Cuisine

The kitchen makes tortilla española with organic, fresh and seasonal ingredients, from its olive oil to free-range eggs and sourdough for its sandwiches. Omelets are now made with pasteurised eggs, and gluten-free options are available.

Eight Tortillas

Tortillas are made with pasteurised Galician eggs and extra virgin olive oil and come individual or to share. Beyond the classic with or without onion, there's caramelised onion, a spicy 'brava', butifarra de perol, Valencian blanquet with a hint of anise, pringá, and La Monumental with Joselito ham, styled on scrambled eggs with puntilla. Every flavour also comes as a bocata, on crispy bread or mollete, with a gluten-free bread option, and the tortillas themselves contain no gluten.

Beyond the Tortilla

Grandma Martina's other recipes, such as stuffed eggs, sit alongside seasonal homemade dishes and chef's specials: León chorizo croquetas, Russian salad and tapas for sharing. Drinks run to Victoria beer, vermouth, specialty coffee prepared by baristas and a monthly selection of natural wines. The bars open from breakfast to dinner, and the company also caters corporate and private events.
