Dum Dum Bernabéu is the second dumpling bar of Dum Dum ('Dumplings & Desobediencia'), opened in 2026 on Calle Infanta Mercedes after the original on Blasco de Garay in Chamberí. The carta is ten house-made dumplings, two of them vegetarian and none conventional, from a Thai-style chicken with peanut to a cochinita pibil and a Madrid 'castizo' with brava sauce and torrezno, with one new flavour each month.

The Story
Dum Dum opened its first dumpling bar on Blasco de Garay, Chamberí, in 2024, and this second house on Infanta Mercedes in 2026. The brand's tagline is 'Dumplings & Desobediencia', and the idea is a short carta that changes every month: ten dumplings, one new each month, two vegetarian, and not one conventional. The kitchen is led by Kéril Gómez, who trained at the Basque Culinary Center; the interiors are by Nota Estudio and the brand identity by Yerai Gómez.
The Cuisine
House-made dumplings, six to a portion, with thin dough and generous fillings that borrow from everywhere: the Muay Thai (chicken, peanut sauce, red onion, coriander), Cochinita Pibil (achiote pork with guacamole and pickled onion), the K-Pop prawn, a Castizo with brava sauce and torrezno, and monthly specials like a lacquered beef rib with sauerkraut or a vegetarian boletus and asparagus with Café de Paris sauce. Recent cartas have also included Cheese Burger, Carbonara and Honey Pumpkin dumplings.
How to Order
Each portion is six dumplings, from about €8.95 to €11.25, and the house reckons four portions is the magic number for two people (five if you're hungry). It's a single order, so plan it in one go. There's one starter, currently a 'latindilla' of cockles with causa, chipotle mayo, purple sweet potato and tajín (€14.95).
Hours and Events
Both houses open every day for two services, 13:00 to 15:39 and 20:00 to 22:39: the kitchen really does close at 39 minutes past, so don't book at half past and arrive late. The Bernabéu room seats about 40, or 60 standing, and is hired out for afterworks, presentations, team-building and birthdays. Takeaway and delivery run through Uber Eats and Glovo.
