Chifa
Chifa is a small Peruvian-Asian fusion restaurant on Calle de Modesto Lafuente in Ríos Rosas, run by brothers Julián and Luis Miguel Gil. The name comes from Peru's Cantonese-Peruvian 'chifa' restaurants, and the carta of 14 dishes plus three daily specials runs from corvina cebiche with two ajíes to 'chino-latino' dumplings, arroz chaufa, brisket tacos and a beef-cheek red curry carried over from their earlier restaurant, Sudestada. It opens every day for lunch and dinner.

Background
About Chifa
The Story
Chifa is run by the Gil brothers, Julián and Luis Miguel, who previously ran Sudestada. The name refers to the 'chifas' of Peru, the Chinese restaurants born from Cantonese migration to Peru in the mid-19th century, and the brothers use that fusion as a starting point to bring Latin American and East Asian cooking together.
The Cuisine
Peruvian-Asian fusion: cebiche with two ajíes, corvina, scallops and octopus; arroz chaufa with free-range chicken, prawns, egg and plantain; green fish curry with zamburiñas; Kung Pao chicken with Sichuan pepper and Mexican chillies; an oriental salmon tiradito; Peking duck empanadas; 'chino-latino' dumplings with Mexican chilli oil; the Sudestada-era beef-cheek red curry; and a Peruvian tamal with green curry. Pisco sours, caipirinhas and a short wine list with a lean towards sherry.
The Chefs
Julián Gil, Luis Miguel Gil

Nearby
Ríos Rosas is a working residential grid north of the old centre, where restaurants answer to the people who live there rather than to visitors. It sits nearer Estadio Santiago Bernabéu than anything touristic, and the eating is unhurried, mid-priced and quietly confident. This is where you go for a proper lunch without theatre.
