Stillroom is on Calle Moreto in Jerónimos, a short walk from the Prado. By day it's a brunch and sous-vide kitchen; on Friday to Sunday evenings it becomes a cocktail bar, with 19 drinks built on house ferments, agar-clarified juices and cordials, from the Floreal to a fat-washed Super Fashion. Small plates run to Cantabrian conservas, Santoña anchovies and ibéricos. It's closed on Monday and Tuesday.

About Stillroom

The Story

Stillroom is on Calle Moreto in Jerónimos, a few minutes from the Prado. It runs as a gastronomic lab by day, with brunch and sous-vide cooking, and a cocktail bar by night, and keeps the work visible: jars of macerations, kombuchas and cordials maturing on the bar. It also runs a cocktail school, La Academia del Cóctel, and does event catering.
