La Gildería is a small vermouth-and-gildas bar on Calle de Calatrava in La Latina, run by Cristina and Yajaira, and it holds a Solete in the Guía Repsol. Gildas come in many versions, from octopus and smoked salmon to prawn and smoked tuna, alongside tins, cold bites and a superb octopus mollete, with a good spread of vermouths and a secret house creation. It doesn't take bookings and fills at weekend aperitivo time.

The Story
La Gildería is the bar of Cristina and Yajaira, built on two pillars: vinegar and vermouth. Its Instagram calls it the house of the queens of vinegar, and the gilda, the Basque pintxo of olive, anchovy and guindilla, is on a pedestal here. It holds a Solete in the Guía Repsol.
The Cuisine
Gildas in many versions, tins and cold bites, plus vermouth. Beyond the classic gilda there are octopus, smoked salmon, prawn and smoked tuna versions; the best-sellers are the smoked sardine on toasted pan de cristal and the smoked cod with piparra mayonnaise and ito togarashi, and the only hot-ish star is the octopus mollete.

A small corner bar with a counter, high tables and plenty of stools, designed by Codoo Studio, keeping a touch of old-tavern spirit while bringing in the energy of its owners and a newer crowd. Space is tight and it fills fast, especially at weekend aperitivo hour. It's pet-friendly, and the team also runs events.
