Santornemi opened in 2019 as a small casa de comidas on Avinguda de Sarrià, run by siblings Laura and Álvaro Albéniz with Laura's husband Santi in the kitchen. The team built the restaurant on the experience they earned at Gelida, where Santi cooked for ten years and Laura and Álvaro worked the dining room for seven. The format is intentionally old-fashioned, a tight neighbourhood dining room serving breakfast and a single lunch service every weekday and Saturday.
