Background
About Quimet d'Horta
The Story
Bar Quimet d'Horta opened in April 1927 when Quimet Carlús and Rosita Not took over the ground floor of a new building on the corner of Plaça d'Eivissa and Carrer Rajolers. It became known as the "bar del lloro" after Juanito, a grey-and-red parrot kept in a cage by the door whose imitation of the tram conductor's whistle would send the Horta-Barcelona tram No. 46 away early. In 1955 Jaume Jalmar Pujol took over, and in 2006 he passed it to his son Josep Lluís, who restored the original doorways, laid the signature floor tiles and made the premises wheelchair-accessible while keeping the bar's early-20th-century character intact.
The Cuisine
The kitchen is built around the xapata del Quimet, a sourdough ciabatta with a custom flour blend baked on-site in a peel oven. Its signature filling is botifarra de Solsona, and the carta lists more than 85 entrepans and over 37 Spanish omelet varieties alongside bikinis, bocatas, torrades and a long list of tapas. Offerings also include house croquetes of chicken, cod or ham, patates braves, Escala anchovies, cured meats, cheeses and a tapa called L'Hou d'Horta built from potato, white and black botifarra, foie and wild mushrooms.
The Team
Josep Lluís Jalmar has run Bar Quimet d'Horta since 2006, continuing the line that began with founders Quimet Carlús and Rosita Not in 1927 and passed through his father Jaume Jalmar Pujol from 1955. The collection of more than 3,000 miniature bottles that fills the walls is Josep Lluís's own, assembled since childhood from purchases, inheritances and gifts brought by customers from trips abroad.
