Biography

Early years

Suto — known as 'Yoshi' — was born in Gunma Prefecture, Japan, and left the country at twenty to train abroad. Over two decades he passed through Italy (2 years), France (5 years), Peru (Central), and Spain (12 years), including positions at Quique Dacosta, Azurmendi, Enigma, and Disfrutar.

Career

In 2019 Suto and his partner Carolina Alarcón opened Suto in the Sants neighbourhood of Barcelona — an intimate omakase-style restaurant with sixteen seats. The restaurant was awarded its first Michelin star at the November 2023 Michelin Gala in Barcelona, entering the 2024 Spain guide.

Philosophy

Suto's cuisine combines Japanese omakase technique with Mediterranean influences picked up across two decades of training abroad. The format is intimate — a counter and a few small tables — designed to put the chef in direct contact with diners over the length of a long, curated menu.
