Sergio Mayor trained as an apprentice at Viridiana under chef Abraham García, worked with Paco Roncero and Sergi Arola, and returned to Viridiana as head chef. He later worked catering at the Casino de Madrid, helped García open the Mexican restaurant Comala and appeared as a cook on the reality show Supervivientes. Around 2020 he opened Lalopez, a stall inside Madrid's Mercado Antón Martín, with Maialen Parra, which has since won the Academia Madrileña de Gastronomía's award for best market stand.

Career
Mayor started as an apprentice at Viridiana, training under chef Abraham García, and developed dim sum technique at Don Lay. He also worked with Paco Roncero and Sergi Arola before returning to Viridiana as head chef, worked catering at the Casino de Madrid, and helped García open Comala, a Mexican restaurant inspired by Juan Rulfo. He also appeared as a cook on the reality show Supervivientes, before opening Lalopez, a stall in Madrid's Mercado Antón Martín, with Maialen Parra around 2020. Lalopez has since won the Academia Madrileña de Gastronomía's award for best market stand.
Philosophy
Mayor describes his cooking as "cuisine without constraints, simple cuisine for me, and daring at the same time."
