Early years

Pedro Guiñales was born in the room that's now Casa Pedro's terrace, and started working there as a boy, standing on a step to reach the bar. His father and grandfather trained him in the kitchen.

Career

Casa Pedro was founded in 1702 by an earlier Pedro Guiñales in what was then the town of Fuencarral, originally as a casa de comidas named "Casa de la Pascuala" after his wife. The Catastro del Marqués de la Ensenada, begun in 1751, records it as one of three mesones in Fuencarral; over the centuries it was known variously as the Mesón Nuevo, Casa de la Silvestra and Casa de la Pascuala, always under Guiñales family ownership. In 1940, Pedro Guiñales López renamed it Casa Pedro and established it as a restaurant specialising in Castilian cuisine. Today's Pedro Guiñales, 78, took sole charge of the restaurant in 1990 and later restored its old wine cellar, which had been removed during a kitchen expansion. He works alongside his daughter Irene, the latest generation to carry on the family business. In 2025, the Academia Madrileña de Gastronomía gave him its Reconocimiento a Toda una Vida.

Philosophy

Casa Pedro continues to produce its own wines, which historically supplied Madrid's Pardo Palace. The kitchen's signature dishes are old Castilian standards: breaded lamb brains, callos (tripe) and rabo de toro (oxtail), alongside the weekend draw of roast lamb and suckling pig. King Juan Carlos I ate his first meal as monarch in the dining room, which has also received King Felipe VI.
