Early years

Malpartida's gastronomic journey began in Peru and consolidated in Spain. He has cooked with Quique Dacosta and at El Celler de Can Roca, two of the most-decorated kitchens in Spain.

Career

Malpartida built his name through a string of restaurants — Tiradito Madrid, Barra M, Luma (Madrid), Maymanta Ibiza, and Kaypa (Menorca) — before opening Maymanta Barcelona on the 19th floor of Grand Hyatt Barcelona on Avinguda Diagonal. The restaurant combines rooftop views with Peruvian-Mediterranean cuisine and was named to the Michelin Guide selection in 2025.

Philosophy

Malpartida's cooking layers Peruvian flavours over Mediterranean ingredients. Around 70% of the Maymanta menu is built on seafood and fish — in line with what's typical in the cevicherías and picanterías of northern Peru — with the rest drawn from Catalan and Spanish product.
