Biography
Early years
Crosas grew up inside Roig Robí, working alongside his mother Mercè Navarro from the restaurant's opening on 25 February 1982. He moved through every role in the house — kitchen, dining room, management — before stepping into the head-chef and director position he holds today.
Career
Mercè Navarro built Roig Robí into one of Barcelona's most respected Catalan restaurants. In 1988 The Observer named her one of the world's best cooks, and she went on to represent Catalan cuisine abroad. After Mercè's death in 2023, Joan has continued the restaurant under the philosophy she set down: cook with love and honesty. Roig Robí carries one Repsol Sol and has been continuously open in la Vila de Gràcia since 1982.
Philosophy
