Jhonatan Maldonado was born in Viña del Mar, Chile, in 1989, and has lived in Mallorca for more than two decades. He now runs the kitchens at Fontsanta, inside the Fontsanta thermal-spa hotel in Campos, and at Botànic, inside Can Bordoy Grand House & Garden in Palma's old town, where he took over in April 2026 succeeding founding chef Andrés Benítez. He trained at the Escola d'Hoteleria de la UIB and cooked through the Michelin-starred kitchens of Zaranda and Coque, as well as Park Hyatt, before joining Fontsanta in 2018. His signature there is RUKA, a tasting menu named for the Mapudungun word for house, built to move between Chile and Mallorca course by course. His cooking bridges Chilean-Mallorcan and contemporary Mediterranean cuisine.
