Biography

Early years

Marambio is of Chilean descent and was born in Canet de Mar on the Catalan coast. He started in the kitchen of the restaurant St. Rémy and met Vicky Maccarone — his eventual business partner — while working together at Mas de Torrent about a decade ago.

Career

Marambio cooked through some of Barcelona's most-talked-about kitchens, including Disfrutar, Tickets, and Pakta — the Adrià / Iglesias brothers' ElBarri group. When the Iglesias brothers transferred the Pakta location to Marambio and Maccarone, the pair opened Alapar in the same space — a Mediterranean izakaya format that opened in 2022. Alapar carries both a Michelin Selected and a Repsol Recomendado distinction.

Philosophy

Marambio's cuisine at Alapar is built around the izakaya format — a Japanese tavern register translated into a Mediterranean product base. The kitchen turns out innovative nigiri and fusion dishes from local, seasonal ingredients, with the bar at the centre of the dining room as the anchor of the experience.
