Biography
Early years
Born in Andújar in Jaén, Agudo was raised in Lloret de Mar on the Costa Brava and trained at the Girona School of Hospitality and Tourism. He finished his studies in 2006 and joined El Celler de Can Roca in Girona as an intern.
Career
After Celler de Can Roca, Agudo joined the team at Albert Adrià's Tickets in Barcelona, working through the kitchen stations. In 2014 he took charge of the kitchen at Tickets, earning the restaurant its Michelin star. In October 2020 he joined Iván Castro and Kasaundra Williams's Mont Bar in Eixample as gastronomic director. Mont Bar earned its first Michelin star and first Repsol Sol in 2022, and was awarded its second Michelin star in the 2026 guide announced in November 2025 — the first 'gastrobar' format in the world to reach two stars. Agudo also runs Mediamanga, the casual sibling concept in the same group.
Philosophy
Agudo's cuisine is rooted in Catalan and Mediterranean tradition but explicitly shaped by the 'gastrobar' format — high-end cooking served in a counter-driven, neighbourhood-bar atmosphere. He has said publicly that the goal is to keep tasting menus accessible and the experience unintimidating, even as the restaurant collects stars.
