Daniel Pozuelo Calvet is the chef and co-founder of Bichopalo in Madrid's Chamberí neighborhood, which he runs with his brother Guillermo Pozuelo. Before opening Bichopalo he trained at Paco Roncero Restaurante, Alboroque, Arzak, Casino de Madrid and DSTAgE. His cooking applies Asian techniques to Mediterranean products in constantly changing tasting menus, and the restaurant held a Michelin Bib Gourmand from 2023 to 2025 and is recommended in the 2026 Michelin Guide, without a Michelin star or Repsol Sol.

Biography
Early years
Pozuelo was born Daniel Pozuelo Calvet in Madrid in 1988 and grew up in the Collado Villalba mountains, where he first learned to cook alongside his grandmother.
Career
He trained at Paco Roncero Restaurante, Alboroque, Arzak, Casino de Madrid and DSTAgE before opening Bichopalo with his brother Guillermo, first in Madrid's Mercado de Barceló in 2019, later relocating to Chamberí after early demand outgrew the space. Guillermo runs the dining room and wine pairings.
Philosophy
Pozuelo describes his cooking as flavors "from here and there," applying Asian techniques, particularly Japanese, to Mediterranean products, with technique kept in service of the product rather than pure presentation. The tasting menus change constantly based on market availability.
