Biography
Early years
Lechuga grew up around meat — his father works in the import and export of beef and other meats, and the family business shaped his eventual focus on carnivorous gastronomy: studying different breeds, origins, and cuts of beef.
Career
In October 2005 Lechuga opened Caldeni in Barcelona near the Sagrada Família, as both chef and owner. He later opened the more casual Bardeni — a meatbar with the aesthetics of an old butcher's shop where meat dishes and tapas anchor the menu — under the same roof. The combined Bardeni-Caldeni concept on Carrer de València carries a Michelin Bib Gourmand. Lechuga was named 'Cuiner Jove 2010' (Young Chef of the Year) by the Catalan Academy of Gastronomy and Best Chef of the Year by the 2011 Girona Gastronomic Forum.
Philosophy
Lechuga's cooking treats meat as the subject rather than the centrepiece: the menu is structured around comparing different breeds, ageings, and cuts. The Caldeni-style Angus steak tartare is the kitchen's signature; the meatbar format makes the technique informal and direct.
