Early years

Guillén built his career over 20 years through Barcelona's most-decorated kitchens — Carles Abellan's Comerç 24, the Hermanos Torres' Dos Cielos, Saüc, and the Adrià brothers' Tickets — before opening his own project.

Career

In March 2018 Guillén opened Barra Alta on Carrer de Laforja in Sarrià-Sant Gervasi with Marco Arriaga and Daniel Roca. He serves as head chef. The format combines a set menu of traditional dishes with contemporary touches, an open kitchen with bar, and French oysters at the counter. Barra Alta Madrid followed in 2022 at Lagasca 19 in the Salamanca district. Both restaurants carry a Repsol Recomendado.
