Career
Jiménez and co-chef David Noguera opened Nuara on 20 December on the renovated Balcó Gastronòmic at Port Olímpic. Nuara — its name derived from the verb nuar, 'to tie knots' — is the most ambitious project to date from the Nuri restaurant family. Ismael Alonso of El Celler de Can Roca consults on the kitchen. The format displays the day's fish and shellfish for diners before they reach the open kitchen and wood-fired grill. Nuara carries a Repsol Recomendado distinction.
Philosophy
