Aleix Serra has been part of the kitchen at Fusion19, in Playa de Muro on Mallorca's north coast, since 2019, and now co-leads it with Marc Marsol, who joined in 2022, taking over from founding chef Javier Hoebeeck, who won the restaurant its first Michelin star in 2023. Serra and Marsol trained together in kitchens including Azurmendi, El Celler de Can Roca, and Fäviken in Sweden. At Fusion19 they build two tasting menus, Plenitud and Esencia, around island-sourced ingredients, including produce from their own vegetable garden near Alcúdia, with occasional detours into Asian and Latin American technique, plus aging chambers for meat and fish. The pair also run Gaikan, the kamado-grill and sushi bistro on Fusion19's terrace. Under Serra and Marsol, Fusion19 added its first Repsol Sol in 2025, alongside its existing Michelin star.
