Its current team presents it as 'de Madrid, desde 1902, un clásico contemporáneo', and built its carta from historic Spanish cookbooks, from Ruperto de Nola and Francisco Martínez Montiño to Ángel Muro, Emilia Pardo Bazán and Simone Ortega.
