At your next restaurant meal, pick one dish and run through this exercise:
- Before tasting, what do you think the chef was trying to do with this dish? Simple comfort? Technical ambition? A showcase for one ingredient?
- On the first few bites, focus on execution. Is the protein cooked correctly? Is the seasoning right? Is there good texture contrast?
- Halfway through, step back. Is this dish balanced? Does every element contribute? Would removing something make it better or worse?
- At the end, did the dish deliver on its intention? How would you rate the ambition vs the execution?
The act of asking these questions changes how you experience the food. It moves you from passive eating to active reading.
