Career
Before co-founding Bacira, de la Red worked at the Michelin-starred El Celler de Can Roca (Girona) and Aponiente (El Puerto de Santa María, Cádiz), as well as Mesón de Doña Filo (Colmenar de Arroyo, Madrid), the Abama hotel (Guía de Isora, Tenerife), and the Madrid restaurants Urkiola Mendi, Viridiana, Kabuki, and Nikkei 225. At Nikkei 225 he met Carlos Langreo and Gabriel Zapata, and the three opened Bacira together on July 10, 2014, in Madrid's Chamberí neighbourhood, running the kitchen as equal partners rather than under one head chef. He is also listed as an instructor at Alambique, a Madrid cooking school.
Philosophy
De la Red describes his own approach as combining tradición y vanguardia, tradition and innovation, a blend that shows up at Bacira in a Mediterranean menu run through Asian and nikkei technique. He's said the range of Mediterranean gastronomic culture is very wide ("el abanico de la cultura gastronómica mediterránea es muy amplio"), which is what gives the three chefs room to keep mixing it with Asian ingredients.
