Career
Langreo trained in Madrid kitchens including the Gran Meliá Fénix hotel, La Nueva Fontana, La Maruca, Martinete, 99 Sushi Bar, and Nikkei 225, where he worked alongside Vicente de la Red and Gabriel Zapata before the three opened Bacira together on July 10, 2014, in Madrid's Chamberí neighborhood. At Bacira, he is credited with the kitchen's traditional Mediterranean register, alongside de la Red's Japanese-honed technique and Zapata's Nikkei background. The three run the kitchen as equal partners: Langreo has said that while they debate disagreements, they always end up working together ("acabamos por trabajar juntos"), and Zapata has described their process as decisions always being made by all three ("las decisiones siempre se toman entre tres").
Philosophy
Bacira's sharing-format menu combines Mediterranean products such as tuna, cod, and offal with Asian ingredients like seaweed, ginger, and lemongrass, drawing on all three chefs' distinct backgrounds rather than a single house style. The trio has described themselves as sponges ("esponjas") who absorb ideas from their whole team when designing new dishes.
