Toni Solans is the Hofmann-trained co-chef and co-founder of Mantis on Carrer de París in la Nova Esquerra de l'Eixample, opened in 2023 with David Romero. The pair trained through DiverXO, Fäviken Magasinet, and Koy Shunka — three internationally starred kitchens — and built Mantis around an open-kitchen Catalan-Asian fusion concept.

Biography

Early years

Solans studied at the Hofmann hospitality school in Barcelona, where he met his eventual business partner David Romero.

Career

Solans and Romero built their experience through stages at three internationally renowned kitchens: the three-Michelin-star DiverXO in Madrid, the late two-Michelin-star Fäviken Magasinet in Sweden, and the one-Michelin-star Koy Shunka in Barcelona. In 2023 they opened Mantis on Carrer de París 145 in la Nova Esquerra de l'Eixample — an entirely open space with a fully visible kitchen, designed with a minimalist register that puts the cooking at the centre of the experience.

Philosophy

Solans and Romero describe their cooking as eclectic, global in influence and anchored in local and seasonal product, with a clear Asian thread. The Mantis format is deliberately transgressive — far from classic fine-dining conventions, with the entire dining room organised around the open kitchen.
