Career
Aisa is one of the long-serving chefs at Bonanova on Carrer de Sant Gervasi de Cassoles 103. The restaurant, opened by Adolfo Herrero in 1963, began as the neighbourhood casinet where locals gathered for drinks and games and grew into a casa de comidas serving Catalan cuisine. Today the Herrero brothers run the restaurant; Aisa cooks alongside César Pastor in the kitchen. Bonanova is in the Michelin Guide selection (recognised since 2013) and Repsol Recomendado.
Philosophy
Aisa's brief at Bonanova is to keep the traditions current — respect for seasonality, maximum-quality product sourced from La Boqueria, and the casa-de-comidas register adapted to contemporary diners. The Art Nouveau interior — original tiles, lamps, hydraulic flooring — is part of the project's identity.
