Steven Wu, full name Steven Bosen Wu Zheng, is the head chef of Sen Omakase, a one-Michelin-star Japanese omakase restaurant he opened in Madrid's Chamartín district in 2024. Born in Palma de Mallorca to Chinese parents who ran the Imperial restaurant in Pamplona, he trained at Le Cordon Bleu and the Tokyo Sushi Academy, then spent more than a year in Kyoto at the Michelin-starred, nine-generation Uosaburo learning Kaiseki cuisine. In 2022 he won Spain's first professional sushi championship, the Itamae competition organized by Balfegó, and Sen Omakase earned its Michelin star in the 2025 Guide about six months after opening.

Biography

Early years

Wu, whose full name is Steven Bosen Wu Zheng, was born in Palma de Mallorca to Chinese parents and grew up in San Sebastián and Pamplona, where his father, Yiqiong "Yokin" Wu, had opened the family restaurant in 1992, first as Gran Dragón, then Dragón Real from 2001 when Japanese food was added, and later Imperial. He completed a degree in computer engineering before choosing cooking instead, training at Le Cordon Bleu and the Tokyo Sushi Academy, and says he got his love of cooking from his father.

Career

In Kyoto he spent more than a year at Uosaburo, a Michelin-starred kaiseki restaurant with more than 250 years of history under the same family, where he learned Kaiseki cuisine. In 2022 he won the Itamae competition organized by tuna producer Balfegó, Spain's first professional sushi championship, taking the title of the country's best sushi chef. He's also cooked as head chef at his family's restaurant, Imperial, in Pamplona. Wu opened Sen Omakase in Madrid's Chamartín district in 2024, serving a 30-35-course omakase menu across four dining rooms; the restaurant won a Michelin star in the 2025 Guide about six months after opening, and it also holds one Repsol Sol.

Philosophy

Wu's menu follows the Kaiseki seasonal phases of Hashiri (a product's arrival), Shun (its peak) and Nagori (its farewell), combining Japanese ingredients with local Spanish product under the hospitality concept of Omotenashi.
