Saúl Sanz is the chef and co-founder of Treze, a market-cuisine restaurant he opened in Madrid in 2010 and runs with his wife, pastry chef Elena Ursu. Treze moved to its current spot on Calle General Pardiñas, in the Barrio de Salamanca, in 2014, and holds a Michelin Bib Gourmand and one Repsol Sol, recognized for game dishes and wild-mushroom cooking. Sanz also opened Terzio, a more casual bar-format restaurant nearby built on dishes originally served off-menu at Treze.

Biography
Early years
Sanz is a Madrid native whose parents worked as matrimonial lawyers; he chose the kitchen instead and trained at the Escuela de Hostelería de la Casa de Campo.
Career
He cooked at Balzac alongside César Martín, who now runs Lakasa, before striking out on his own. Sanz opened Treze in 2010 on Calle San Bernardino, behind Plaza de España, with his wife, pastry chef Elena Ursu. In 2014 he moved the restaurant to Calle General Pardiñas 34, in the Barrio de Salamanca, where it built a following for market-driven, seasonal cooking, especially game and wild-mushroom dishes; it holds a Michelin Bib Gourmand and won its first Repsol Sol in 2023. He later opened Terzio, a smaller, more casual bar-format restaurant nearby, built around dishes that started as off-menu specials at Treze.
Philosophy
Sanz has said a restaurant or bar should be "a fun place, full of joy where interesting and exciting things happen," built on respect for ingredients and a kitchen that changes with the seasons. Of Terzio, he's described it as "the evolution of playful cuisine we enjoyed making at Treze and offered off-menu, but it no longer made sense within our current gastronomy and we didn't want to lose it."
