Biography

Early years

Pilar Pedrosa is one of three sisters (Pilar, Mercedes "Merche", and Paula) from the village of Villoldo in the Tierra de Campos region of Palencia. Their father, Anselmo, opened the family's Estrella del Bajo Carrión hotel-restaurant there in 1975 and died seven years later; the three sisters took over running the family hotel-restaurant themselves through the 1980s.

Career

On 23 August 2013, Pilar opened Villoldo in Madrid's Salamanca neighbourhood with her son Alfonso Fierro, bringing the family's Palencia casa de comidas recipes to the capital, while another son, Anselmo Fierro, handles front-of-house. Her sister Mercedes runs the wine list and business side of the wider family restaurant group, which also includes the original Estrella del Bajo Carrión and other establishments in Palencia and Madrid. The restaurant won the Academia Madrileña de Gastronomía's Premio a la Cocina Regional en Madrid in 2022.

Philosophy

Villoldo's menu is built around locally sourced, seasonal Palencia produce (grilled Torquemada peppers, Saldaña beans, region-raised pigeon), well before that kind of sourcing was fashionable. Pilar, and later her son Alfonso Fierro, both trained under Martín Berasategui, have refined the family's traditional Castilian recipes without abandoning them.
