Patxi Zumarraga is the head chef and co-founder of Haramboure, a Basque-French bistro in Madrid's Castellana neighbourhood that he opened in September 2023 with Patricia Haramboure. Born in Durango in 1973, he was head chef at Mendigoikoa from 1995 to 2001, then trained at elBulli, The Fat Duck and Nobu, before spending twelve years as a partner in Madrid's La Ancha group and co-founding Fismuler in 2016 with Nino Redruello and Jaime Santianes. Haramboure holds a Michelin Selected listing and one Repsol Sol, and Zumarraga also runs a morning tortilla-sandwich stand outside the restaurant.

Biography
Early years
Zumarraga was born in Durango, in Spain's Basque Country, in 1973, and went to school there before turning to cooking. His career took him through kitchens in Gasteiz, Bilbao, Girona, Zamudio and London before he settled in Madrid.
Career
He was head chef at Mendigoikoa from 1995 to 2001, then passed through kitchens including elBulli, The Fat Duck, Nobu London and Gaminiz. He spent twelve years as a partner in Madrid's La Ancha restaurant group, where he helped develop La Gabinoteca and co-founded Fismuler in 2016 alongside Nino Redruello and Jaime Santianes, all three previously of elBulli. After selling his stake in La Ancha and leaving Fismuler at the end of 2022, he opened Haramboure on Calle Maldonado in Madrid's Castellana neighbourhood in September 2023, together with Patricia Haramboure, an Argentine of Basque-French heritage from Mar del Plata who had also worked at Fismuler; the 80-seat restaurant is named after her, and she runs its dining room and wine list while Zumarraga heads the kitchen.
Philosophy
At Haramboure, Zumarraga describes his cooking as natural cuisine built on recognizable-origin ingredients, sourced from small artisan producers and Basque fishermen he selects personally. Separate from dinner service, he also runs a tortilla-sandwich stand outside the restaurant each morning, which drew press attention in Spain after diners began queuing for it.
