Biography
Early years
Núria Gironès grew up inside Ca l'Isidre, the restaurant her parents Isidre Gironès and Montserrat opened in 1970 on Carrer de les Flors in El Raval. She combined a degree in Hotel Management with work in the family business, then completed international culinary training in France and Switzerland and studied oenology to be able to curate the restaurant's wine programme herself.
Career
In 2017 Gironès took over the management of Ca l'Isidre from her father, bringing a contemporary perspective while preserving the restaurant's identity. Under her direction the restaurant earned a Repsol Sol in 2022 and continues to be one of the city's enduring Catalan addresses, with a chef-led kitchen (Jordi Juan Santigosa) and a wine programme she curates personally.
Philosophy
Gironès's approach to Ca l'Isidre is one of continuation — keeping her father's principles around Boquería sourcing and Catalan tradition at the centre, while adding her own oenological depth and a contemporary register to the dining-room experience.
