Early years
Nicolás Nájera is Ecuadorian. He grew up around fire-based cooking, raised between his father's grill and his mother's family restaurant kitchens, and describes Sunday chicken wings as part of that childhood memory.
Career
He studied gastronomy in Argentina, worked in New York's restaurant scene, and later trained in haute cuisine in Spain. He spent more than four years leading production at GoXo before moving to RavioXo, both projects from Dabiz Muñoz's XO restaurant group. He then left to launch his own project, Wing Wing, which started as a delivery-only concept in spring 2025 before opening a stall at Madrid's Mercado de San Leopoldo in the Tetuán district.

Wing Wing applies haute-cuisine technique to chicken wings marinated for 24 hours, cooked in stages over fire and finished on Marabú charcoal, without frying or breading, paired with a menu of 50 signature sauces organised by region, from Spanish sofrito and brava to Mexican mole poblano and Ecuadorian encocada.
