Early years

Luis De Los Ríos was born in Chimbote, a city about six hours north of Lima, Peru. He has cooked since age 14, carrying on a culinary line from his mother and grandmother, who were both cooks.

Career

He trained at Tanta, the restaurant group founded by chef Gastón Acurio, which he describes as his school in Madrid. He went on to run kitchens at other Madrid restaurants before opening Mikuna in November 2019, his first venture as an executive chef running his own kitchen. Mikuna marked its fifth anniversary in November 2024.

Philosophy

Mikuna's concise menu is built on the pillars of tradition and fusion, blending Peruvian cuisine with Asian seasonings and Mediterranean ingredients. Its menu has included dishes such as dumplings with carabineros, coconut foam and Thai red curry, duck rice with green herbs and criolla sauce, and scallops with kimchi and lime.
