Hideki Matsuhisa is a Japanese chef who has run Koy Shunka in Barcelona's Gothic Quarter since 2008. The restaurant earned a Michelin star in 2013 and holds two Repsol Soles. He is the only Japanese chef currently holding a Michelin star in Spain.

Biography

Early years

Matsuhisa was born in 1972 in Toyota, Japan, where his father ran a restaurant. He was trained from childhood in classical Japanese technique, and at nineteen began collaborating in restaurants in Tokyo.

Career

In 1997 Matsuhisa moved to Barcelona. In 2001 he opened Shunka together with his wife, his sister and his brother-in-law, and in 2008 he opened the more refined Koy Shunka nearby in the Gothic Quarter. Koy Shunka earned its first Michelin star in 2013 and has held it continuously. Matsuhisa has since expanded the group with additional concepts in Barcelona, Andorra (Koy Hermitage at Sport Hotel Hermitage in Soldeu), and Formentera. In Barcelona he also runs Ikoya Izakaya, a casual Sagardi-group collaboration in El Born.

Philosophy

Matsuhisa's cuisine combines Japanese techniques and Mediterranean ingredients — a long-standing position in Barcelona's Japanese scene that pre-dates the more recent wave of nikkei and fusion concepts. His menus emphasise pairings between local seafood and Japanese cooking discipline, served at a U-shaped wooden counter where the kitchen is the room's focal point.
