Biography
Early years
Gambirasi was born in Seregno, in the Brianza region north of Milan. He trained in multiple Michelin-starred restaurants in France and Italy — including a stint at Trussardi alla Scala in Milan, then a two-Michelin-star restaurant.
Career
Gambirasi co-founded Agreste in 2016 in the Gràcia neighbourhood with maître d' Roser Asensio — a project conceived to express both his Italian roots and the Catalan land that became his home. The restaurant later relocated and rebranded as Agreste Mar inside Hotel Serras Barcelona, the five-star hotel on Passeig de Colom facing Port Vell. Agreste Mar carries one Repsol Sol. The à la carte averages around €80 per person; the tasting menu runs nine courses for €100.
Philosophy
Gambirasi's cooking unites Italian technique with Catalan and broader Mediterranean ingredient. Fresh pasta — made twice daily by him and his team — is the foundation of the menu, alongside Mediterranean seafood treated through a precise, restrained Italian register.
