Biography
Early years
Devoto was born in Argentina to Italian parents. He began his career as a sous chef at Martitegui in Mendoza, then completed internships at Michelin-starred restaurants in London and Paris.
Career
Devoto's career took him through some of Europe's most-talked-about kitchens, including the Michelin-starred Relae in Copenhagen, then deeper into bread work at La Curruca (Málaga) and Cloudstreet Bakery (Barcelona). In mid-2017 he and his wife María Escobar — who is from Spain's Andalucía — opened Olivos Comida y Vinos in Sants, an eight-seat restaurant with Devoto in the kitchen and Escobar on the dining-room. Olivos carries one Repsol Sol and is included in the Michelin Guide selection.
Philosophy
Devoto's cooking pulls Buenos Aires through the Italian thread of Argentinian cuisine into a Mediterranean register. Bread is central: he has cared for the same sourdough starter for over fifteen years, originally brought from Paris. The eight-seat format keeps the kitchen in direct contact with every diner.
