David Moreno is a Mexican chef, born in Mexico City in 1988, who leads the kitchen at Can Simoneta Gastronòmic on a clifftop site near Canyamel, on Mallorca's east coast. He trained at Le Cordon Bleu in Mexico, studied pastry at Espai Sucre in Barcelona, and worked in the kitchen at Dos Palillos, before also cooking in Argentina, Thailand, Japan and Canada. He then spent four years on Andreu Genestra's team at his restaurant in the Hotel Predi de Son Jaumell, starting as head pastry chef and rising to head chef after three months. In 2019, Moreno took over Can Simoneta Gastronòmic, building it around "Mexiterráneo," a concept crossing Mediterranean cooking with his Mexican roots using Mallorcan produce, served as the fifteen-course tasting menu Origen. Guia Repsol awarded the restaurant its first Sol in 2023.
