Early years

López is from Salamanca and trained at Mesón de Gonzalo in his home city before moving to the three-Michelin-star Akelarre in Donostia — Pedro Subijana's foundational Basque restaurant.

Career

López met Javier San Vicente — from A Coruña — while both worked under Carles Abellán in Barcelona. Together they opened Taberna Noroeste in Poble Sec, a restaurant whose name combines San Vicente's Galician (north) heritage with López's Salamanca (west) one. The restaurant has an open kitchen and a small bar from which guests watch the two chefs work. The menu is short and changes with the market. Taberna Noroeste is in the Michelin Guide selection and Repsol Recomendado.

Philosophy
