Alex de la Fuente is the chef and co-founder of In-Pulso, a Madrid restaurant he opened in 2022 with his brother Adrián de la Fuente. He trained under Santi Santamaría, Fernando P. Arellano, and Ricardo Sanz, then spent five years as head chef under Ramón Freixa at Freixa's two-Michelin-star restaurant in Madrid before starting his own project. In-Pulso focuses on reviving forgotten Madrid recipes and holds a Michelin Bib Gourmand as well as a recommendation from the Guía Repsol.

Biography
Early years
In 2004, De la Fuente began his training at the Escuela Superior de Hostelería de Lago, then worked in the kitchens of Santi Santamaría, Sergi Arola, Fernando P. Arellano, and Ricardo Sanz.
Career
He passed through the kitchens of Punto MX under Roberto Ruiz, learning the foundations of Mexican cuisine, then spent five years as head chef alongside Ramón Freixa at Freixa's two-Michelin-star Madrid restaurant. In 2022, De la Fuente opened In-Pulso in the Arganzuela district of Madrid together with his brother Adrián de la Fuente.
Philosophy
In-Pulso is built around recovering forgotten recipes from Madrid's culinary past, researched from old recipe books, history books, and Golden Age-era poems, then reinterpreted in a personal, contemporary form. The dining room seats 28.
