NOI is the signature restaurant of Nobis Hotel Palma, set inside a restored medieval palace in the centre of Palma, built around two interior patios. It has its own direct entrance at the side of the hotel. Head chef Xema Álvarez also leads the kitchen at the group's sister restaurant, Xalest.
The Cuisine
The cooking is European-inspired Mediterranean, built on a sharing-style menu and seasonal courses from the garden, the sea, and the Spanish land. The kitchen leans on locally produced Mallorcan ingredients and states a km-0 ambition of keeping ingredients' transport as short as possible. A weekly-changing three-course lunch menu offers a choice of three dishes per course, always including a vegetarian starter and main.
