Derzu Bar is a tiny Asian tavern on a residential corner of Barajas, open since 2016 and holding a Solete in the Guía Repsol. Chef Daniel Vangoni, formerly head chef at El Cenador de Salvador, describes the food as Spanish produce put through a neighbourhood Asian kitchen: crab spring rolls, butifarra bao with kimchi, black gyozas with squid ink and pork jowl, wok rice, noodles and pad thai, plus off-menu dishes every week. Most plates cost €5 to €16.

About Derzu Bar

The Story

The name comes from Dersu Uzala, the nomadic hunter of Akira Kurosawa's 1975 film. Daniel Vangoni, a cook of Italian origin who grew up in Barajas, trained at Salvador Gallego's school and ended up as head chef at El Cenador de Salvador. He then took over a small bar near home and turned it into Bahía Taberna, which ran for around 15 years; Derzu followed in 2016, the result, he says, of a Sunday craving for Asian food with nothing nearby, and later the Italian Lupara Bar. The house's 'Kung Food' pun borrows kung fu's Chinese sense of a skill earned through constancy and effort.

The Cuisine

Asian street recipes from China, Thailand, Japan and Korea, reworked with Spanish ingredients and cooked to order over a hard wok flame. The printed carta is a single short sheet that changes often, and the kitchen adds new off-menu dishes each week.

The Carta

The 2026 carta starts with a spring roll (€5), a bao (€7), gyozas (€12), black gyozas and dim sum sold by the piece (€3 to €4). Mains are €16 each: wok rice, noodles, pad thai with prawns, tamarind, peanuts and a slow-cooked egg, pork ribs cooked for hours and glazed in hoisin, and Ibérico pork jowl, with a crispy burger and a 'jamburguer' at €10. House classics include the crab spring roll with sweet-and-sour sauce, the grilled butifarra bao with kimchi, hoisin and cucumber, prawn and pork-belly gyozas in broth, and the black gyozas filled with pork jowl, squid in its ink and herring roe. Chef's specials change daily, from wok-fried rice with baby squid and pork belly to pig's ear with lime and coriander.

Desserts and Drinks

Desserts are €8: a matcha 'Té-ramisú', a chocolate and passion fruit cake, and a yuzu cheesecake on crisp biscuit. The wine list is short and unpretentious but runs to small producers and the odd big name, with a strong line in sparkling: Vangoni reckons bubbles, above all Champagne, are the best match for this food. The beer is Mahou. Derzu opens for lunch and dinner every day except Tuesday, and does takeaway.

It looks like a street-market stall dropped under a housing block: an open wok kitchen inside the room, high tables and stools, colourful lanterns, a Kill Bill poster, Polaroids of regulars on the walls and cutlery in empty tea tins. Electronic music plays, the woks flare, and it fills up fast, even on a Monday, so book. Vangoni's own word for the style is macarra.
