Rubén Iborra brings his Ruge rice and grill to Plaza de la Lealtad

Rubén Iborra, the chef behind Ruge in the Sierra de Guadarrama, has opened Ruge La Barra at Plaza de la Lealtad 3, near the Prado: rice dishes, grilled meats and a Levante-style mid-morning almuerzo.

Rubén Iborra made his name in Madrid with Chirashi in Tetuán, which he closed to open Ruge, a grill-and-rice restaurant by the La Jarosa reservoir in the Sierra de Guadarrama, in 2025. Now he's back in town with Ruge La Barra, at Plaza de la Lealtad 3, a more casual, urban spin-off near the Prado that has just opened.

It brings back the Levante mid-morning almuerzo, with vermouth, fresh shellfish and salazones, plus artichokes in sauce, grilled meats and rice dishes including rabbit, with a Tabarca-style caldero to order 48 hours ahead. El Mundo puts the average spend at €40 to €60.
