Dalirium opened in June 2026 at Aribau 30, in the Eixample, a rice restaurant that leans into the evening. It is the new project of the group behind Barcelona's Paellería, pairing arroces and Mediterranean cooking with author cocktails in a single room.

The concept borrows from Salvador Dalí: the name and the staging nod to a surrealist imaginary, and the space is built to carry you from dinner into an after-dinner drink rather than to turn tables. Operations director Diana Londoño frames it as a natural evolution of the group's rice cooking: 'La arrocería Dalirium nace como evolución natural del grupo. Queríamos mantener la esencia gastronómica que ya funciona, pero dotarla de un contexto más trabajado a nivel de marca, estética y experiencia global' ('Dalirium is born as a natural evolution of the group. We wanted to keep the gastronomic essence that already works, but give it a more considered context in terms of brand, aesthetics and overall experience').
